Korean Fried Chicken – Sweet Garlic

We are coming back with another Korean fried chicken recipe – which is not surprising because we have an undying LOVE for Korean fried chicken!

This time, instead of using yangnyeom (spicy sweet) sauce, we are re-creating my favorite sweet garlic fried chicken from Chan Chan (one of my favorite Korean restaurant in Orange County!).

The marinating and frying process is pretty similar to our Yangnyeom Korean fried chicken recipe except that we use onion powder and egg to fry for this recipe. The sauce though, is where the difference lies.

Korean fried Chicken

Chan Chan’s sweet garlic Korean fried chicken sauce is sweet and creamy, so we wanted to recreate that similar texture and taste.

To do that, butter will be our best friend along with honey and kewpie mayo. We are huge fan of garlic, so of course we would add that in too. While the soy sauce gives you the umami flavor that blends well with the other ingredients.

ingredients:

CHICKEN MARINADE

  • 1.5lbs chicken wings
  • ½ tsp black pepper
  • ½ tsp salt

FRYING INGREDIENTS

  • ¼ cup all-purpose flour
  • 1/3 cup potato starch
  • ½ tsp salt
  • ½ tsp onion powder
  • 1 egg, whisked
  • 4-5 cups cooking oil

SWEET GARLIC SAUCE

  • 1 tbsp melted butter
  • 3 cloves garlic, minced
  • 1 tsp soy sauce
  • 1.5 tbsp honey
  • 2 tbsp kewpie mayo

steps:

  1. First, marinade the chicken by combining the chicken wings with black pepper and salt in a bowl. Cover the bowl and refrigerate it for at least 30 minutes.
  2. While the chicken is marinating, prepare the frying batter. In a bowl, combine all-purpose flour, potato starch, salt, onion powder. Mix the dry ingredients. In a separate bowl, prepare the whisked egg.
  3. After the chicken is marinated, pour the cooking oil into wok or a deep saucepan. Let it warm up in medium heat.
  4. Once the oil is hot, start deep frying the chicken in medium heat for 6-8 minutes each.
  5. Then, take the chicken off the heat and turn your stove up to high heat to double fry. Wait for 1-2 minutes for the oil to heat up before placing the chicken into the oil again.
  6. Fry only for 2-3 minutes and be careful not to burn the chicken.
  7. Next, set the chicken off heat and make the sweet garlic sauce. Combine melted butter, minced garlic, soy sauce, honey and kewpie mayo in a bowl.
  8. Finally, pour the sweet garlic sauce in a pan on medium heat and add the fried chicken. Stir the chicken and sauce together for 1-2 minutes. Serve and enjoy!
